Ultra-Healthy Noodle Bowl with Miso Tahini Sauce

The holidays and winter months are full of rich dishes, so I try to work in some ultra-healthy meals to help mitigate the deluge of potatoes and dairy.

This dish, which I lovingly refer to as a “hippie bowl”, is an ultra low calorie and high fiber antidote to holiday splurges.  While you could make this with any kind of noodles and it would still be a wonderfully healthy dish, what makes this ultra-low calorie is the use of shiritaki noodles.

Panettone French Toast with Apples and Pomegranate

Let me start by staying, this is not a typical breakfast in my house.  This is a rich and decadent holiday breakfast, suitable for Christmas morning, or a pre-soccer game brunch for 11 year olds.  ðŸ™‚

Panettone is a traditional Milanese sweet bread that is enjoyed around Christmas and New Years throughout Europe.  It is an egg bread with a light and fluffy texture, and usually contains raisins, currents, candied orange, or other dried fruits.   It is widely available in the US around the holidays.  I have seen it at Whole Foods and Trader Joes.

I had some panettone left over from a holiday snack mix that I was making, so I decided to use the remaining pannetone to make a holiday french toast.  The results were delicious.  Enjoy!

Arancini

How can you make a delicious risotto even more delicious?  Make the leftovers into arancini.  Arancini are delicious fried balls of risotto, often stuffed with cheese and served with tomato sauce.  I made them tonight with a delicata squash risotto that I took to the Thanksgiving dinner that my husband I attended.  I stuffed them with crumbled blue cheese and hazelnuts and served them alongside cedar-planked salmon and roasted broccoli.
